A big part of the enjoyment of camping with friends and family is the shared meals. From hotcakes and campfire coffee in the morning to burgers and roasted corn on the cob for dinner. The eating is good but the cooking can sometimes be more than you’d like especially since you’re supposed to be on vacation. That’s where the crockpot comes in to save the day. There are some really tasty recipes that can be made, simmered all day, and you still enjoy a delicious meal when it’s done. We found some recipes you might like to try.
Crockpot Green Chili Chicken
This is simple to make with canned and prepackaged ingredients. You’ll need to cut up some chicken breasts and some garlic and onion. Then add green chili, some Rotel tomatoes, brown sugar, and chicken broth. After several hours you pull the chicken out and shred it with a fork. Drop it back in and then enjoy it on a soft tortilla with sour cream and avocado. It really will be a crowd pleaser and you’ll only have the crockpot to wash.
Crockpot Ground Beef and Wild Rice
This is another easy one. You’ll brown some ground beef with onion and, once drained, drop them in the crockpot. Add mushrooms, mushroom soup, long grain and wild rice, some salt & pepper and let it perk for most of the day. It’s a hearty dish to feed a crowd and will taste even better the next day.
Crockpot Dump Cake
You can even bake a cake in your crockpot. Just stir a stick of butter into a box of yellow cake mix. Spread a large can of pie filling on the bottom of the crockpot and drop the cake mixture on top of it. In just a couple of hours you have a sweet, bubbly treat that begs for a scoop of ice cream. Delicious.
